AI finds new food physics in the literature
Penn State researchers built AgentXtract, a team of AI agents guided by food experts, that organized more than 4,000 records from decades of scattered papers in about 30 minutes. The resulting database exposed a previously unreported relationship between two properties governing how more than 100 foods interact with electromagnetic energy. The study received partial funding from Anthropic.
